Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Bake fries
Preheat oven to 200°C/180°C fan. Slice potatoes (skins on) into fries. Add fries to large baking tray with drizzle of vegetable oil and generous pinch of salt. Toss fries in oil until coated. Place tray in oven and roast for 30 min or until golden and crisp.
2 Prep vegetables
Meanwhile, slice tomatoes. Peel and finely slice red onion. Finely chop gherkins. Wash and separate baby gem lettuce leaves.
3 Caramelise onions
Heat a non-stick pan over low heat. Once hot, add butter, onion, brown sugar and a pinch of salt. Cover with a lid and cook for 20 min, stirring occasionally, until caramelised.
4 Make sauce
Meanwhile, combine gherkins, mayonnaise, ketchup, Dijon mustard, garlic powder and a pinch of salt - this is your burger sauce.
5 Fry burger
Heat second non-stick pan over medium heat with drizzle of oil. Once hot, add vegan patties and fry for 3-4 min on each side. Once browned, top patties with burger cheese, cover with lid and fry for 2 min further until cheese has melted.
6 Load burgers
Load burger buns with burger sauce, cheese patties, gemlettuce, tomatoes and caramelised onion. Serve fries to the side along with any leftover sauce.
