Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep ingredients
Slice the vegansausages. Peel and finely chop the shallots. Peel and chop the potatoes. Rinse and trim the green beans.
2 Make mash
Add the potatoes to a pan of boiled water with a generous pinch of salt. Cook the potatoes over a medium heat for 15 min or until soft. Once soft, drain the potatoes and return them to the pan with the almond milk and olive oil. Mash until smooth and season with salt.
3 Fry
Meanwhile, heat oil in a pan and fry the sliced sausages and chopped shallots for 3 min. Transfer the sausage and shallots to a plate and return the pan to a medium heat.
4 Start sauce
Add a drizzle of oil to the pan. Add the all purpose flour and, using a whisk, stir constantly for 3 min or until the flour starts to brown. Gradually pour in the measured water, whisking constantly.
5 Finish sauce
Add the soy cream, soy sauce, Dijon mustard and black pepper. Return the sausages and shallots to the pan and simmer for 5 min or until the sauce has a gravy consistency.
6 Boil green beans
Meanwhile, chop the chives. Cook the green beans in a pot of salted boiling water for 3-4 min or until tender. Drain once cooked. Garnish the sausage gravy, potato mash and green beans with the chopped chives.
