Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Saute

Peel and mince onion and garlic. Heat oil in a saucepan over medium high heat. Saute onion for 5 minutes. Add garlic, cook for 1–2 minutes.
Simmer

Add drained and rinsed white beans, water, stock cube, and a good pinch of salt and black pepper. Bring to a boil, reduce heat to low, cover, and simmer lightly for 15 minutes.
Cook pasta

3 Cook pasta

Meanwhile, cook the pasta in boiling water until “al dente”. Approx 4-5 minutes..
Prep veggies

While pasta and sauce are cooking, clean and slice mushrooms. Halve broccolinis.
Fry and season

5 Fry and season

Fry mushrooms in oil in a pan until nicely browned, about 5 minutes. Set aside. Saute broccolinis for about 3 minutes until crisp-tender. Season lightly with salt and pepper.
Make sauce

6 Make sauce

Puree the white beans and soya yogurt to a smooth sauce with a mixer or in a blender. Season with salt to taste. Combine with cooked pasta, mushrooms and broccolinis.
