Instructions

Bake chicken

1 Bake chicken

Preheat the oven to 200°C/180°C fan. Place the chicken in a baking dish. Add the oil, paprika powder, salt and pepper. Turn to coat. Bake for 5 min. The chicken does not need to be cooked through at this point.
Prep

Meanwhile, peel and finely chop the onion and garlic. De-seed and finely chop the red pepper. Separate the broccoli into florets.
Fry vegetables

3 Fry vegetables

Heat a non-stick pan over a medium-high heat with a drizzle of oil. Once hot, add the onion and peppers with a pinch of salt and fry for 6 min or until softened. Add the garlic and fry for 1 min further.
Simmer

4 Simmer

Add the tomato paste, passata, measured water, 0.5 stock cube and the oregano. Bring to a boil, then reduce the heat to low and simmer for 5 min. Season to taste with salt and pepper.
Bake

Pour the sauce over the chicken breasts and top with the mozzarella. Bake for 5-7 min or until the cheese begins to brown and the chicken is cooked through.
Tip! To check if the chicken is cooked, insert a knife into the meat - if the juices run clear, it's ready.
Cook broccoli

6 Cook broccoli

Meanwhile, bring a pot of water to a boil and cook the broccoli florets for 4-5 min until tender. Drain. Pick the basil leaves. Garnish the cheesy chicken with the basil and serve the broccoli to the side.
