Instructions

Fry beef

1 Fry beef

In a bowl, toss the steak strips in the corn starch with a pinch of salt. Heat a non-stick pan over a medium-high heat with a generous drizzle of oil. Once hot, add the strips and fry for 4 min. Transfer the strips to a plate (reserve the pan for step 4).
Prep vegetables

2 Prep vegetables

Meanwhile, de-seed and finely slice the pepper. Trim and slice the snow peas in half. Finely chop the spring onion. In a bowl, mix together the coriander powder, a pinch of 5 spice, the ginger-garlic paste, soy sauce, sweet chilli sauce, sriracha sauce (spicy!), rice vinegar and sweet soy sauce. This is your stir-fry sauce.
Make cauli 'rice'

3 Make cauli 'rice'

Using a box grater or food processor, grate or blitz the cauliflower until it resembles rice grains. Heat a second frying pan over a medium-high heat with a drizzle of oil. Once hot, add the cauliflower with a pinch of salt and stir-fry for 7 min. Cover and reserve.
Stir-fry

4 Stir-fry

Meanwhile, return the unwashed pan to a medium heat with a drizzle of vegetable oil. Once hot, add peppers and snow peas. Fry for 4 min or until the peppers begin to soften. Add the beef strips and stir-fry sauce. Fry for 1 final min.
Serve

5 Serve

Add the spring onions to the beef strips and toss. Plate the cauliflower rice and top with the chilli beef.
Tip! This one reheats well! Have the leftovers for lunch the following day.
