Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Fry beef
In a bowl, toss the steakstrips in the corn starch with a pinch of salt. Heat a non-stick pan over a medium-high heat with a generous drizzle of oil. Once hot, add the strips and fry for 4 min. Transfer the strips to a plate (reserve the pan for step 4).
2 Prep vegetables
Meanwhile, de-seed and finely slice the pepper. Trim and slice the snowpeas in half. Finely chop the spring onion. In a bowl, mix together the coriander powder, a pinch of 5spice, the ginger-garlicpaste, soy sauce, sweetchillisauce, srirachasauce(spicy!), ricevinegar and sweetsoysauce. This is your stir-fry sauce.
3 Make cauli 'rice'
Using a box grater or food processor, grate or blitz the cauliflower until it resembles rice grains. Heat a second frying pan over a medium-high heat with a drizzle of oil. Once hot, add the cauliflower with a pinch of salt and stir-fry for 7 min. Cover and reserve.
4 Stir-fry
Meanwhile, return the unwashed pan to a medium heat with a drizzle of vegetable oil. Once hot, add peppers and snowpeas. Fry for 4 min or until the peppers begin to soften. Add the beef strips and stir-fry sauce. Fry for 1 final min.
5 Serve
Add the springonions to the beef strips and toss. Plate the cauliflowerrice and top with the chillibeef.
Tip!This one reheats well! Have the leftovers for lunch the following day.
