Beef Rib Eye with Zucchini Gratin au Gruyere

Instructions

1 Prep vegetables

Remove the steaks from the fridge 30 min before cooking. Preheat the oven to 200°C/180°C fan. Wash and slice the zucchini finely. Peel and slice the shallots finely. Peel and crush the garlic. Rinse and dry the rocket.

2 Season zucchini

Place the zucchini slices in a bowl with a drizzle of olive oil and a pinch of salt and pepper. Add the dried parsley and garlic. Mix well with clean hands.

3 Fry shallots

Heat a drizzle of oil in a pan over a medium heat. Add the shallots and fry with a pinch of salt for 3 min until slightly softened. Season with pepper.

4 Bake gratin

Transfer the fried shallots to a baking dish. Top with a thin layer of grated gruyere. Top this layer with a layer of zucchini slices. Top with the remaining gruyere. Bake in the oven for 20 min.

5 Fry steaks

Pat the steaks dry with kitchen paper. Heat a pan with a drizzle of olive oil and half of the butter. Once hot, add the steaks and fry them for 3-4 min on each side or until cooked to your liking. Transfer the steaks to a plate and leave them to rest for 10 min. Reserve the pan. Once rested, season with salt and pepper.

6 Make sauce

Meanwhile, return the pan to a medium-low heat. Add the mustard, sour cream and the remaining butter. Cook for 2 min, loosening any bits from to the bottom of the pan with a spatula. Season with a pinch of salt and pepper. Serve the steak with the zucchini gratin and the Dijon sauce. Garnish with the rocket leaves.

Tips for fussy eaters

Slice the steak and serve it with boiled potatoes and grated cheese on top.
