Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Roast
Preheat the oven to 220°C/200°C. Scrub the potatoes clean (no need to peel them). Slice them into wedges. Chop the bell pepper. Peel and slice the carrot into disks. Place the potatoes, carrots and bell pepper onto a lined baking tray. Drizzle with olive oil. Roast for 25-30 min or until the potatoes are soft and everything is starting to crisp. Season with salt and pepper.
2 Prep sauce
Meanwhile, chop the spring onion. Peel and mince the garlic. Grate the Parmesan. Rinse and chop the fresh coriander.
3 Make sauce
Heat a drizzle of oil in a pan over a medium heat. Add the spring onion, garlic and cajun spice. Cook for 2-3 min. Add the cream, measured water, grated Parmesan and chopped coriander. Simmer for 3 min until the sauce has thickened. Season with salt. Keep warm.
4 Fry steaks
Pat the steaks and prawns dry with kitchen paper. Heat the butter and a drizzle of oil in a pan over a high heat. Once hot, add the steaks and fry for 2-4 min per side or until cooked to your liking. Set aside to rest for at 5-10 min. Season with salt and pepper.
5 Fry prawns
Meanwhile, wipe the pan clean and return it to a high heat with a drizzle of oil. Fry the prawns for 1-2 min per side until cooked through but still juicy. Season with salt and pepper.
6 Serve
Top the rested steaks with the prawns. Serve with the cajuncream sauce and the roasted potatoes and vegetables.
