Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

1 Prep

  • Preheat the oven to 200°C/180°C fan.
  • Peel and finely chop the onion.
  • Peel and mince the garlic.
  • Trim and roughly chop the spinach.
  • Discard the stems.
Fry

2 Fry

  • Heat a large pan over a medium heat with a drizzle of olive oil.
  • Once hot, add the onion and spinach with a pinch of salt.
  • Fry for 4 min or until wilted.
  • Add the garlic and smoked paprika powder.
  • Fry for 30 sec.
Simmer sauce

3 Simmer sauce

  • Add the stock cube, cooking cream, honey and plum tomatoes.
  • Break down the tomatoes with a spatula.
  • Simmer for 5 min or until thickened.
  • Once thickened, season the sauce with salt and pepper to taste.
Pulled chicken

4 Pulled chicken

  • Add the pulled chicken.
  • Simmer for 3 min further or until warmed through.
Bake lasagna

5 Bake lasagna

  • Pour 1/3 of the chicken sauce over the bottom of an oven-proof dish.
  • Top with half of the lasagna sheets.
  • Repeat.
  • Cover with the grated cheddar and the grated Parmesan.
  • Bake for 20-25 or until the cheese is golden and bubbling.
Tip! You may need to layer the sauce and lasagna sheets differently depending on the size of your dish.
Serve

6 Serve

  • Meanwhile, pick the basil and chop the tomatoes in half.
  • Add the basil leaves and tomatoes to a bowl with a drizzle of olive oil.
  • Toss.
  • Allow the lasagna to cool for 5 min before serving.
  • Serve the Cheesy Chicken Lasagna with the Tomato and Basil Side Salad.
