Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep vegetables
Peel and finely chop the onion and garlic. Dice the bell pepper. Peel and slice the carrot into thin coins. Clean and slice the mushrooms. Slice the zucchini into french fries. Grate the Parmesan.
2 Fry chicken
Heat a large pan over a medium-high heat with a drizzle of olive oil. Once hot, add the chickenthighs and fry for 3 min until nicely golden. Flip and fry on the other side for 2 min. Transfer the chicken to a plate and set aside.
3 Fry vegetables
Return the pan to a medium-high heat and add the onion, bell pepper, carrot and mushrooms. Fry with a pinch of salt for 5 min. Add the garlic and tomatopaste and fry for 2 min further.
4 Add and stew
Return the chicken to the pan. Add the choppedtomatoes, measured water, chickenstockcube, honey, driedoregano, Kalamata olives and blackpepper. Cover the pan with a lid and simmer over a low heat for 15 min. If it thickens too much, add a splash of water.
5 Fry zucchini
Meanwhile, heat a second pan over a medium-high heat with a drizzle of olive oil. Once hot, add the zucchini and fry for 3 min with a pinch of salt until nicely browned. Finally sprinkle with 1/3 of the grated Parmesan.
6 Serve
Shred each chicken thigh into 2-3 pieces. Sprinkle the cacciatore with the remaining Parmesan. Serve the Parmesanzucchini on the side.
