Chicken Souvlaki with Tzatziki

Instructions

1 Marinate chicken

Preheat the oven to 220°C/200°C fan. Slice the chicken breasts into strips and place them in a bowl. Wash the lemon and grate its zest with a fine blade, taking care to avoid its bitter white pith. Peel and crush the garlic. Add 0.75/1/1.5 tsp of lemon zest, 1/1.5/2 Tbsp of lemon juice, the crushed garlic, olive oil, honey, dried oregano, salt and pepper to the bowl. Marinate for 15 min.

2 Roast veggies

Meanwhile, peel and slice the onions into wedges. Chop the peppers and tomatoes roughly. Place the onions, peppers and tomatoes on a lined baking tray. Drizzle with olive oil and season with salt. Roast in the oven for 10 min.

3 Add chicken skewers

Thread the chicken onto bamboo skewers. Remove the vegetables from the oven and add the skewers on top (alternatively you can cook the skewers on a grill and continue baking the vegetables in the oven). Roast the vegetables and the chicken skewers for 10 min further or until the chicken is cooked through.

4 Make tzatziki

Add the natural yogurt to a bowl. Grate the cucumber. Wrap the grated cucumber in kitchen paper or a clean kitchen towel and squeeze it firmly to remove its liquid. Add the cucumber to the yogurt. Season with salt and pepper.

5 Heat pitas and assemble

Toast the pita breads and slice them in half to make pockets. Fill the pockets with the roasted vegetables, chicken and tzatziki.

Tips for fussy eaters

Serve the individual components separately and let everyone stuff their own pittas.
