Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Fry
Heat a pot over a medium-high heat with a drizzle of oil.
Fry the onions and cherry tomatoes for 3-4 min until softened.
2 Add spices
Add the tomato paste, ginger garlic paste, indianmasalamix.
Mix well, cook for 1 min.
3 Add chickpeas
Meanwhile, drain and rinse the chickpeas.
Add the chickpeas, coconutmilk and vegetableseasoning.
Bring to a simmer, lower the heat and cook for 3 min.
Add the babyspinach and cook for a further 3-4 min until the spinach has wilted and the chickpeas are tender.
Adjust seasoning to taste.
4 Heat rice
Meanwhile, finely chop the corianderleaves and stalks, reserving some for garnish.
Heat a separate pan over a medium heat.
Fry the carrot and rice with the corianderpowder and a pinch of salt for 3-4 min.
Once the rice is warmed through mix through the freshcoriander.
5 Serve
Serve the Chickpea, Spinach & CoconutCurry With Carrot and CorianderBrownRice. Garnish with the reserved coriander.
