Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Peel and cut onions to wedges. Cut bell peppers to chunks. Peel and cut carrots to coins. Discard zucchini ends, and cut zucchinis to chunky pieces. Combine the veggies in a bowl. Add olive oil and stir to coat. Pour into an oven dish lined with baking paper or a greased roasting dish.
2 Bake
Add chicken drumsticks on top of the veggies. Roast at 225°C for 25 minutes. Crumble the feta cheese on top, and continue roasting for another 10 minutes. Season with salt, pepper, and balsamic vinegar. Serve hot.
