Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Make Fries
Preheat the oven to 220°C/200°C fan.
Slice the potatoes (skins on) into fries.
Add the fries to a large baking tray with a drizzle of oil and the potatoseasoning
Toss the fries in the oil until they are fully coated.
Bake for 35-40 min or until golden.
2 Prep chicken
Meanwhile, pat the chicken breasts dry with paper towel.
Slice each chicken breast in half as if you were cutting a burger bun, so you are left with two thinner chickenescalopes.
Season the chicken with salt and pepper.
Tip!Alternatively, you can wrap each chicken breast in cling film, and use a rolling pin to bash it out until halved in thickness.
3 Prep breading
On one plate, mix the flour with a pinch of salt and pepper.
On a second plate, whisk the eggs.
On a third plate, mix the panko bread crumbs with the parmesan, zest of the lemon and chickenseasoning.
One by one, coat both sides of the chicken breasts in the flour, then the beaten egg and finally in the panko breadcrumbs.
Press the chicken into the panko bread crumbs so they stick well.
Set aside.
4 Make slaw
Finely chop the chives.
In a bowl, combine the slawmix with the mayonnaise, mustard and a pinch of salt and pepper.
Mix through the chives, saving some for garnish.
5 Fry chicken
Meanwhile, heat a good drizzle of oil in a large pan over a medium-high heat.
Fry the chicken for 4-5 min on each side or until crispy, golden brown, and cooked through.
Drain on kitchen paper to remove any excess oil.
Tip!If using an air fryer, preheat to 180°C. Add the breaded chicken to the basket with a drizzle or spray of oil. Air fry for 10-12 min before turning. Cook for another 3-5 min until crispy and cooked through. Do not crowd the basket and cook in batches.
6 Serve
