Fillet Steak in Blue Cheese Sauce

with Garlic Mushrooms

Instructions

1 Prep

Preheat the oven to 220°C/200°C fan. Pat the steaks dry with kitchen paper. Wash and trim the green beans.

2 Prep mushrooms

Melt the butter in a large bowl in the microwave for 30 sec.  Peel and crush the garlic. Chop the parsley. Add the mushrooms, garlic, parsley, salt and pepper to the melted butter. Mix well.

3 Bake mushrooms

Pour the garlic butter mushrooms into a baking dish. Bake for 15-20 min until well browned.

4 Fry steaks

Meanwhile, heat a large pan with a drizzle of oil over a high heat. Once hot, add the steaks and fry them for 2 min on each side until well browned on the surface. Transfer the steaks to a plate and leave to rest. Season with salt and pepper.

5 Make sauce

Return the same pan, without washing it, to a medium heat. Add the cream, water and blue cheese. Bring to a simmer, then reduce the heat to low. Return the steaks to the pan and cook them in the sauce for 4 min. Flip the steaks and cook for a final 3 min or until cooked to your liking. The sauce should have thickened nicely. Add a splash of water if it looks too thick.

6 Boil green beans

Meanwhile, cook the green beans in a pot of salted boiling water for 3-4 min or until tender. Drain once cooked. Serve alongside the steaks, blue cheese sauce and mushrooms.

Tips for fussy eaters

Serve with mashed potatoes, green beans and a bit of the sauce.

Pro tip

Perfect your steak cooking skills! Remove the meat from the fridge 30 minutes before frying. Pat the surface dry with kitchen paper. Wait until the pan is very hot before you start frying the steaks.
