Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Cook potatoes
Preheat the oven to 200°C. Either wash or peel the potatoes and cut in two (lengthwise) so that you can continue cutting them in the shape of long chunky fries. Place the potatoes in a lined or oiled tray and drizzle some olive oil, picked thyme leaves and salt on them. Cook in the oven for 20–25 minutes or until cooked through, golden on top and crispy.
2 Peel tomatoes
Boil water in a deep pan and once boiling, drop the tomatoes in the water for 1 minute or until the skin cracks. Remove the tomatoes from the water and peel them gently.
3 Blend
Heat oil in a pan over medium heat and fry the crushed garlic and shallots for 2–3 minutes. Add oregano and stir well. Pour the shallot and garlic in a blender with the tomatoes and tomato paste. Blend until smooth (you can also use a mixer, or just chop the tomatoes small and mix with the other ingredients). Season with salt, pepper and a pinch of cayenne.
4 Flatten chicken
Put the chicken breasts between 2 sheets of cling film and pat them out with a rolling pin until they're an even thickness, about 1 cm.
5 Fry chicken
Heat oil on a pan over medium high heat and fry the chicken until nicely browned, for about 3 minutes per side. You might need to fry the chicken in batches, in order to get a nice colour. Season the chicken with salt and pepper.
6 Serve
Cover the chicken with the coulis and bring to a boil. Serve the chicken in tomato coulis with the roasted potatoes.
