Instructions
1 Prep cabbage
Cut cabbage to big wedges. Cut beef bacon to thin strips.
2 Boil cabbage
Place cabbage wedges into a pot and add enough water to almost cover the cabbage. Add bacon strips, peppercorns and salt. Bring to a boil, cover and cook for about 10 minutes or until the cabbage has softened.
3 Drain and chop
Drain cabbage and beef well. Pick out peppercorns. Remove hard cabbage stems. Chop cabbage leaves to thin strips. Place the strips back into the pot and add butter. Stir over medium heat for about 5 minutes. Season with more salt, if needed. Then take off the heat and cover with a lid. Keep warm.
4 Fry sausages
Heat oil in a pan over medium-high heat. Add sausages and bring the temperature down to medium. Don't poke the sausages so that they remain juicy. Fry sausages for about 5 minutes, turning, until cooked through and nicely browned all around. Serve with the cabbage.
