Lettuce Cheese Burger Wraps

with Beef Bacon and Secret Sauce

Instructions

1 Roast sweet potato fries

Preheat the oven to 200°C/180°C fan. Slice the sweet potatoes (skins on) into fries. Add the fries to a large baking tray with a drizzle of vegetable oil, the corn starch and a generous pinch of salt. Toss until fully coated. Roast in the oven for 25-30 min or until golden and crisp.

2 Fry onions

Meanwhile, heat a non-stick pan over a medium-high heat. Peel and slice the onions. Once hot, add the butteronions and salt. Fry over a medium heat for 15 min or until softened and starting to brown. Occasionally stirring. Add the honey. Mix and reserve.

3 Make secret sauce

Meanwhile, in a bowl, combine the mayonnaiseketchupWorcestershirechipotle powder (spicy!) and garlic powder. Whisk until combined.

4 Make patties

Add the beef bacon to a cold pan and turn the heat to medium. Fry the bacon for 5 min until the fat has melted and the bacon is crispy. Transfer the bacon to a plate lined with kitchen paper. Reserve pan and bacon grease. Combine the beef mince with the marmite and black pepper. With clean hands, knead the meat mixture until soft and fully combined. Shape the mixture into patties 4/6/8.

5 Fry patties

Return the pan over a medium-high heat. Once hot, add the patties and fry for 4 min on each side or until browned and cooked through. Slice the cheese. Top each patty with the fried onion and cheddar cheese slices, cover with a lid and cook for 1 min further or until the cheese has melted.

6 Assemble

Cut the iceberg lettuce in half and separate the leaves. Load the iceberg lettuce with the secret sauce, top with the cheese burger patties and crispy beef bacon. Serve the sweet potato fries on the side.

Tips for fussy eaters

Make it a regular burger by adding your favourite bun!

Pro tip

If the patties are looking too fat to fry, halve them and shape them into two instead.
