Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Peel and chop the shallots and garlic. Drain and rinse the blackbeans.
2 Start chilli
Heat a pan over a high heat with a drizzle of vegetableoil. Once hot, add the beefmince and shallots, and fry for 5 min. While frying, break the beefmince as much as possible, using a spatula.
3 Add spices
Add the garlic, a pinch of chipotle(spicy!), smokedpaprika and tomatopaste. Cook, stirring, for 2 min.
Add the measuredwater, stockcube, and blackbeans. Cover with a lid, reduce the heat to low and simmer for 5 min, stirring occasionally. If the stew thickens too much, add a splash of water.
Tip!Turn down the heat and add half the yogurt to the chilli to make the chilli creamier. Yum!
Meanwhile, finely chop the coriander. Slice the chilli. Roughly chop the tomatoes. Cut the limes into wedges.
Squeeze half of the lime wedges into the chilli. Serve the chilli con carne. Top with a dollop of yogurt, the tomatoes, sliced chilli(spicy!), coriander and remaining lime wedges.
