Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

Peel and chop the shallots and garlic. Drain and rinse the black beans.
Start chilli

2 Start chilli

Heat a pan over a high heat with a drizzle of vegetable oil. Once hot, add the beef mince and shallots, and fry for 5 min. While frying, break the beef mince as much as possible, using a spatula.
Add spices

3 Add spices

Add the garlic, a pinch of chipotle (spicy!), smoked paprika and tomato paste. Cook, stirring, for 2 min.
Simmer

4 Simmer

Add the measured water, stock cube, and black beans. Cover with a lid, reduce the heat to low and simmer for 5 min, stirring occasionally. If the stew thickens too much, add a splash of water.
Tip! Turn down the heat and add half the yogurt to the chilli to make the chilli creamier. Yum!
Toppings

Meanwhile, finely chop the coriander. Slice the chilli. Roughly chop the tomatoes. Cut the limes into wedges.
Serve

6 Serve

Squeeze half of the lime wedges into the chilli. Serve the chilli con carne. Top with a dollop of yogurt, the tomatoes, sliced chilli (spicy!), coriander and remaining lime wedges.
