Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

Using a box grater or food processor, grate or blitz the cauliflower until it resembles rice grains. Peel and chop the shallots and garlic.
Fry shallots

Heat a large pan over a medium heat with a drizzle of oil. Add the shallots with a pinch of salt and fry for 3 min until soft. Add the garlic and fry for 1 min further,
Simmer

Add the beef mince and fry for 5-7 min or until browned and starting to crisp. Add the cauliflower to the pan with a pinch of salt and stir-fry for 5 min. Add the tomato passata, sugar, measured water, crumbled stock cube, and fajita seasoning. Cover and simmer for 5 min or until thickened.

Meanwhile, roughly chop the tomatoes. Finely chop the coriander leaves. Slice the lime into wedges.
Cheese

Once the tomato sauce has thickened, top with the grated mozzarella and cover the pan with a lid. Cook for 1 min or until the cheese has melted.
Serve

6 Serve

Top the Mexican cauli and beef pan with the tomatoes, coriander, sour cream and a squeeze of lime juice. Serve the remaining lime wedges on the side. Dig in!
