Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Using a box grater or food processor, grate or blitz the cauliflower until it resembles rice grains. Peel and chop the shallots and garlic.
2 Fry shallots
Heat a large pan over a medium heat with a drizzle of oil. Add the shallots with a pinch of salt and fry for 3 min until soft. Add the garlic and fry for 1 min further,
3 Simmer
Add the beefmince and fry for 5-7 min or until browned and starting to crisp. Add the cauliflower to the pan with a pinch of salt and stir-fry for 5 min. Add the tomato passata, sugar, measured water, crumbled stockcube, and fajitaseasoning. Cover and simmer for 5 min or until thickened.
4 Prep toppings
Meanwhile, roughly chop the tomatoes. Finely chop the coriander leaves. Slice the lime into wedges.
5 Cheese
Once the tomatosauce has thickened, top with the gratedmozzarella and cover the pan with a lid. Cook for 1 min or until the cheese has melted.
6 Serve
Top the Mexican cauli and beef pan with the tomatoes, coriander, sourcream and a squeeze of lime juice. Serve the remaining lime wedges on the side. Dig in!
