Mozzarella Steaks with Baked Tomatoes

and Baby Spinach

Instructions

1 Bake tomatoes

Preheat the oven to 220°C/200°C fan. Slice the tomatoes in half and place them, cut side up, in a baking dish. Drizzle with olive oil and season with salt and black pepper. Bake for 20-25 min.

2 Prep steaks

Meanwhile, remove the rump steaks from the fridge 20 min prior to cooking. This will allow them to reach room temperature. Pat the steaks dry with kitchen paper. Set aside. Slice the soft mozzarella.

3 Fry steaks

Heat a large pan with a drizzle of olive oil over a high heat. Once hot, add the rump steaks and fry them for 2-3 min on each side. Season with salt and pepper. Top with the sliced mozzarella. Transfer the mozzarella steaks to a plate to rest for 5-10 min.

4 Prep salad

Just before serving (see pro tip), season the spinach with a drizzle of olive oil and a pinch of salt and pepper. Toss and divide among plates.

5 Serve

Add the baked tomatoes and the mozzarella steaks to the plates. Drizzle the tomatoes and the steaks with the balsamic vinegar. Garnish with the fresh basil leaves.

Tips for fussy eaters

Serve their mozzarella steaks with pasta and fresh tomatoes.

Pro tip

Dress your salad just before serving, otherwise it will go soggy!
