Instructions
1 Bake tomatoes
Preheat the oven to 220°C/200°C fan. Slice the tomatoes in half and place them, cut side up, in a baking dish. Drizzle with olive oil and season with salt and blackpepper. Bake for 20-25 min.
2 Prep steaks
Meanwhile, remove the steak from the fridge 20 min prior to cooking. This will allow the meat to reach room temperature. Pat the steak dry with kitchen paper. Set aside. Slice the soft mozzarella.
3 Fry steaks
Heat a large pan with a drizzle of olive oil over a high heat. Once hot, add the steaks and fry them for 2-3 min on each side. Season with salt and pepper. Top with the sliced mozzarella. Transfer the mozzarella steaks to a plate to rest for 5-10 min.
4 Prep salad
Just before serving (see pro tip), season the spinach with a drizzle of olive oil and a pinch of salt and pepper. Toss and divide among plates.
5 Serve
Add the baked tomatoes and the mozzarella steaks to the plates. Drizzle the tomatoes and the steaks with the balsamicvinegar. Garnish with the freshbasil leaves.
