Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Boil a kettle.
Slice the snowpeas in half.
Finely chop the corianderleaves.
Add the rice noodles to a large bowl.
Cover them with boiling water.
Leave to soak for 5 min.
2 Fry
Heat a large pan over a medium-high heat with a drizzle of oil.
Once hot, add the redcurrypaste(spicy!), gingergarlicpaste, currypowder and turmeric.
Fry for 2 min or until fragrant.
Tip!Swap the ginger garlic paste for freshly grated ginger and garlic for an even more fragrant broth.
3 Simmer
Add the coconut milk, 0.5 stockcube, measuredwater, sambaloelek(spicy!) and limeleaves.
Bring to a simmer.
4 Boil
Once simmering, add the snowpeas and prawns to the bubbling broth.
Reduce the heat to medium-low.
Cook for 3 min stirring occasionally.
Remove the pan from the heat.
5 Finish
After the noodles have soaked for 5 min, drain and add to the broth.
Stir in the bean sprouts, fish sauce, sesameoil, corianderleaves and a squeeze of lime juice (reserve some coriander and a wedge of lime for garnish!).
Tip!Make sure to pick out the lime leaves before serving.
6 Serve
Serve the One-pot Prawn Laksa with Rice Noodles and Snow Peas.
Spoon the broth over the top.
Garnish with any remaining corianderleaves and lime wedges.
