Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Cook broccoli

1 Cook broccoli

Separate the broccoli into florets. Bring a large pot of salted water to the boil. Add the broccoli and cook for 4-5 min or until tender. Drain.
Oyster sauce

2 Oyster sauce

Meanwhile, add the oyster sauce, sweet soy sauce, soy sauce, rice vinegar, a generous grind of black pepper and corn starch to a bowl. Whisk until combined. Finely chop the spring onion.
Cauliflower 'rice'

3 Cauliflower 'rice'

Using a box grater or food processor, grate or blitz the cauliflower until it resembles rice grains. Heat a pan over a medium heat with a drizzle of oil. Once hot, add the cauliflower with a pinch of salt and stir-fry for 5 min.
Stir fry

4 Stir fry

Meanwhile, heat a second pan over a high heat with a drizzle of oil. Once hot, add the steak strips and fry for 3 min. Add the ginger garlic paste and fry for 1 min further. Transfer the steak strips to a plate and reserve the pan.
Tip! If the pan is looking crowded, fry the steak strips in batches. This will stop them from stewing, rather than frying!
Finish

Return the pan to a medium-high heat. Add the oyster sauce and beef stock. Simmer for 3 min or until the sauce begins to thicken. Stir constantly. Add the cooked broccoli and spring onion and toss.
Serve

6 Serve

Serve the beef and the sauce over the cauliflower rice and garnish with the sesame seeds.
