Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Cut chicken breasts to small cubes and set aside. Peel and mince shallots. Peel carrots and cut to very small cubes. Wash and chop the spinach. Clean and slice mushrooms. Peel and mince garlic. Peel and grate ginger. Discard chilli stems (and seeds, if you prefer a milder taste). Cut chillis to rings.
2 Cook
Heat oil in a large pot over medium high heat. Fry shallot, carrot and mushrooms for 5 minutes. Add garlic, ginger, chilli and lemon grass paste, fry for 2 minutes. Add water, stockcube, coconut milk and lime leaves. Bring to a boil, cover and adjust the heat. Let simmer lightly for 15 minutes.
3 Add and cook
Add chickencubes to the soup, cook for 5 minutes. Add spinach and cook for 3 more minutes. Season with salt and pepper. Take off stove and keep warm under lid.
4 Boil noodles
Bring a pot of water to a boil and add noodles. Boil for 3-4 minutes, then drain well and divide to soup bowls. Ladle the soup on top of the noodles. Squeeze some lime juice on top. Serve with extra lime wedges and chopped fresh coriander.
