Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Make mash

1 Make mash

  • Peel and chop the potatoes into bite-sized pieces.
  • Add the potatoes to a pot of salted water and bring to the boil.
  • Cook for 15-20 min until soft.
  • Drain the potatoes and return to the pot.
  • Mash until smooth, gradually adding the milk until it reaches the desired consistency.
  • Season with salt and pepper.
Prep

  • Peel and finely chop the shallots.
  • Trim the green beans.
Fry beans

3 Fry beans

  • Heat a large pan to medium with a drizzle of olive oil.
  • Fry the shallots for 1-2 min until softened.
  • Set aside half the amount to use for making the gravy in Step 5
  • Fry the green beans in the rest of the shallots for 3-4 min.
  • Add a splash of water and cover to steam cook for 3-4 min until softened to your liking.
  • Transfer to a plate, and reserve the pan.
Fry turkey

4 Fry turkey

  • Meanwhile, coat the turkey breast with chicken seasoning.
  • Heat the reserved pan over medium heat with a drizzle of oil.
  • Fry the turkey breast steak for 4-5 min on each side until cooked through.
  • Add a sprig of rosemary to the pan to infuse flavour.
  • Set the turkey breast aside, and use the pan to make the gravy.
Make gravy

5 Make gravy

  • Return the pan to medium heat, and melt the butter.
  • Add the reserved shallots and mix in 0.5 tsp flour and 0.5 stock cube until a sandy paste is formed.
  • Mix in the whipping cream and measured water, and cook for 3-4 min until thickened
Tip! Add a bit of cranberry sauce if you like it on the sweet side, otherwise, save it to serve on the side.
Serve

6 Serve

  • Serve the Turkey Breast and Mashed Potatoes with Green Beans, Cranberry Sauce and Gravy.
  • Garnish the green beans with the crispy onions.
