Roasted Lime Salmon and Sweet Potato Bake

Instructions

1 Roast sweet potatoes

Preheat the oven to 200°C. Peel sweet potatoes and cut to french fries. In a bowl, coat with olive oil and season with salt and pepper. Pour to an oven tin lined with baking paper. Bake in the oven for 15 minutes.

2 Prep salmon

Season salmon with salt and black pepper. Wash limes and cut to thin slices. Divide the slices on top of the fish.

3 Add salmon and bake

Take the tin from the oven and add salmon pieces, skin side down. Continue baking for 10–15 minutes until the sweet potatoes are done and the salmon is cooked through but juicy. Chop the fresh coriander on top.

4 Boil green beans

Meanwhile, rinse green beans and remove stems. Bring a pot of salted water to a boil and cook green beans for 4–5 minutes until crisp-tender. Drain. Serve with the roasted sweet potatoes and the lime salmon.

Tips for fussy eaters

Season one piece of fish with salt only!
