Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Wash and peel
Clean and chop spinach and parsley. Wash or peel potatoes and rinse cherry tomatoes.
2 Make white sauce
Melt butter in a pan and whisk in the flour. Pour milk in slowly, whisking constantly until you have a smooth sauce.
3 Season and add
Add grated cheese and season with Dijon mustard, salt and pepper. Mix spinach and half of the chopped parsley into the sauce.
4 Bake fish
Preheat the oven to 200°C. Place the seasoned cod fillets in a greased baking dish. Add the sauce and the cherry tomatoes on top. Bake in the oven for 25 minutes until the sauce is bubbling.
5 Boil veggies
While the fish is cooking, boil the small potatoes in salted water for 15 minutes. Add peas and continue cooking for 5 minutes. Drain and mix with a bit of butter and the remaining chopped parsley. Serve with the fish.
