Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep vegetables

Pat the beef strips dry with kitchen paper. Peel and finely chop the brown onion. Clean and quarter the mushrooms.
Fry beef

2 Fry beef

Heat a large non-stick pan with half of the butter and half of the olive oil over a medium-high heat. Once hot, add the beef strips and fry for 2-3 min until browned. Transfer them to a large pot.
Fry mushrooms and onion

3 Fry mushrooms and onion

Add the remaining butter and oil to the pan. Add the mushrooms and onion and fry for 5 min. Transfer the mushrooms and onion to the pot with the fried beef strips.
Add and stew

4 Add and stew

Sprinkle the beef and mushrooms with the all-purpose flour, mix well and cook over a medium heat for 1 min. Add the tomato paste, Dijon mustard and black pepper and cook for 2 min further. Add the measured water and crumbled beef stock cube. Once boiling, reduce the heat to low, cover and simmer for 15-20 min. Add a splash of water, if necessary.
Boil tagliatelle

5 Boil tagliatelle

Meanwhile, bring a large pot of salted water to the boil. Once boiling, add the tagliatelle and cook for 8-10 min until 'al dente' or cooked to your liking. Drain. Meanwhile, slice the pickled gherkins finely.
Finish sauce and serve

6 Finish sauce and serve

Add the sour cream to the beef stew and season with salt. Divide the tagliatelle among plates and top with the Stroganoff stew. Garnish with the pickled gherkins or serve them to the side.
