Beef Stroganoff with Tagliatelle

and Gherkins

Instructions

1 Prep vegetables

Pat the beef strips dry with kitchen paper. Peel and finely chop the brown onion. Clean and quarter the mushrooms.

2 Fry beef

Heat a large non-stick pan with half of the butter and half of the olive oil over a medium-high heat. Once hot, add the beef strips and fry for 2-3 min until browned. Transfer them to a large pot.

3 Fry mushrooms and onion

Add the remaining butter and oil to the pan. Add the mushrooms and onion and fry for 5 min. Transfer the mushrooms and onion to the pot with the fried beef strips.

4 Add and stew

Sprinkle the beef and mushrooms with the all-purpose flour, mix well and cook for 1 min. Add the tomato paste, Dijon mustard and black pepper and cook for 2 min further. Add the measured water and crumbled beef stock cube. Once boiling, reduce the heat to low, cover and simmer for 15-20 min. Add a splash of water, if necessary.

5 Boil tagliatelle

Bring a large pot of salted water to the boil. Once boiling, add the tagliatelle and cook for 8-10 min until 'al dente' or cooked to your liking. Drain. Meanwhile, slice the pickled gherkins finely.

6 Finish sauce and serve

Add the sour cream to the beef and season with salt. Divide the tagliatelle among plates and top with the Stroganoff . Garnish wit the pickled gherkins.

Tips for fussy eaters

Not a fan of mushrooms? Fry them separately.

Pro tip

These leftovers reheat well! Heat them in a saucepan with a splash of water. Stroganoff can also be served with mashed potatoes or rice.
