Lamb Burgers In Pitta with Tzatziki

and Sweet Potato Wedges

Instructions

1 Roast sweet potatoes

Preheat the oven to 220°C/200°C fan. Wash the sweet potatoes thoroughly and chop them into french fries. Coat with olive oil and sprinkle with salt. Place on a lined baking tray. Spread them out. Roast for 25 min.

2 Fry onion

Meanwhile, peel and chop the onion and garlic. Heat a pan over a medium-high heat with a drizzle of oil. Fry the onion with a pinch of salt for 5 min. Add the garlic and fry for 2 min further. Transfer the onion and garlic mixture to a plate.

3 Make patty mixture

In a bowl, combine the lamb mince, cooled onion and garliccumin, coriander, paprika, chilli flakes (spicy!), black pepper and salt. With clean hands, knead the mixture until tender. Form into patties and refrigerate.

4 Make tzatziki

Grate the cucumber and squeeze out any excess liquid. Combine the cucumber with the yogurt. Chop the mint leaves and mix them into the yogurt. Season with a pinch of salt.

5 Fry patties

Return the pan to a medium-high heat with a second drizzle of oil. Add the burger patties and reduce the heat to medium. Fry for 4 min on each side until browned but juicy.

6 Serve

Meanwhile, warm the pita breads in the oven for 3-5 min. Stuff the warmed pitta breads with the lamb burgers and the tzatziki. Serve with the sweet potato fries to the side. 

Tips for fussy eaters

Eat with your hands!

Pro tip

Wait until the pan is hot before you fry the burgers. Once you've placed the burgers in the pan, reduce the heat.
