Lamb Burgers In Pitta with Tzatziki

and Sweet Potato Wedges

Instructions

1 Roast sweet potatoes

Preheat the oven to 220°C/200°C fan. Wash the sweet potatoes thoroughly and chop them into fries. Toss in vegetable oil and sprinkle with salt. Place on a lined baking tray. Spread them out. Roast for 20-25 min.

2 Prep

Meanwhile, peel and chop the onion and garlic. Chop the fresh dill and set aside.

3 Make patty mixture

In a bowl, combine the lamb minceonion and garliccoriander cumin powder, paprika, chilli flakes (spicy!), black pepper and salt. With clean hands, knead the mixture for 3 min until tender. Shape into patties.

4 Make tzatziki

Grate the cucumber and squeeze out any excess liquid. In a bowl, combine the cucumberGreek yogurt and fresh dill. Season with a pinch of salt. Refrigerate.

5 Fry patties

Bring a pan to a medium-high heat with a drizzle of oil. Add the burger patties and reduce the heat to medium. Fry for 4 min on each side until browned but juicy.

6 Serve

Meanwhile, warm the pitta breads in the oven for 2-3 min. Serve lamb burgerspitta, rocket and tzatziki together. Serve with the sweet potato fries to the side. Or, stuff the warmed pitta breads with the lamb burgers, rocket and tzatziki. Serve with the sweet potato fries to the side.
