Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Marinate
Take the butter to room temperature. Preheat the oven to 220°C degrees. In a large bowl mix the soy sauce, honey, lemon juice (keep a spoon for the salad dressing), a dollop of oil, half of the garlic crushed, salt and pepper. Rinse and cut the peppers into squares. Cut the chicken in cubes and add
in the bowl. Mix well the sauce and chicken together.
2 Roast skewers
Keep the skewers sticks under running water for a few seconds. Then fill them up with the chicken cubes and pepper squares. Place in a roasting dish and cook in the oven for 15-20 minutes. Optionally you can fry them on a pan/grill for 5 minutes per side.
3 Cook corn
Boil water in a large pot. Clean the corn and once the water is boiling, place the corn in the pot and cook for 15-20 minutes or until the kernels feel soft and cooked.
4 Make garlic butter
Place the butter on a chopping board (use a piece of baking parchment to avoid washing up) and squash it with a fork. Crush the remainder of the garlic on the butter and season the butter lightly with some salt. Now mix the butter, garlic and salt together with the fork. Place in a small bowl and keep in the fridge until ready to use.
5 Make salad
Rinse the cherry tomatoes and cucumber. Halve the tomatoes and dice the cucumber.
6 Season and serve
In a small salad bowl mix together the tahini, a little lemon juice and a spoon of water. Add the cucumbers and tomatoes in the bowl and mix. Season with salt and pepper. Serve the chicken skewers with fresh corn, a slice of garlic butter and the cucumber salad.
