Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Marinate
Place the prawns in a bowl. Marinate with sriracha sauce, half of the lime juice, minced garlic, half of the red chilli and a pinch of salt.
2 Make dressing
In another bowl prepare the salad dressing. Mix the remaining lime juice with the agave syrup, red chilli and fish sauce.
3 Slice and dice
Peel the papaya, cut in half lengthwise and remove the seeds. Slice the papaya into fine matchsticks and add to a serving bowl. Add the tomatoes (rinsed and halved) and the chopped herbs. Pour in the dressing and mix well.
4 Fry prawns
Heat a spoon of oil in a pan and fry the prawns for 3-4 minutes until cooked through. Season lightly with salt. Serve with the papaya salad and chopped peanuts.
