Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

1 Prep

  • Pick and finely chop the coriander leaves.
  • Finely chop the cucumber and tomatoes into small cubes.
  • Peel and finely chop the red onion.
  • Peel and mince garlic.
  • Drain the corn.
Fry

2 Fry

  • Heat a large pan over a medium heat with a drizzle of oil.
  • Once hot, add the onion with a pinch of salt.
  • Fry for 5 min.
  • Add the garlic, smoked paprika, a pinch of chipotle powder (spicy!).
  • Fry for 1 min further.
Tip! If cooking for kids, leave out the chipotle.
Add pulled beef

3 Add pulled beef

  • Add the barbecue sauce, measured water and pulled beef.
  • Simmer for 5 min.
  • Season with salt and pepper to taste.
  • Sprinkle with the grated cheddar, cover, and set aside to keep warm.
  • Keep the barbecue pulled beef aside.
Tip! If cooking for kids, set aside a portion of the barbecue beef sauce and grated cheddar to use as 'sprinkles'
Make corn salsa

4 Make corn salsa

  • Meanwhile, in a large bowl, combine the olive oil and a squeeze of lime juice with a pinch of salt to taste.
  • Add the cucumbers, tomatoes, corn and coriander.
  • Mix the corn salsa well.
Tip! If cooking for kids, set aside a portion of the chopped cucumbers, tomatoes, corn and coriander to use as 'sprinkles'.
Warm tortillas

5 Warm tortillas

  • Heat the tortilla wraps in the microwave for 30-60 secs or until warm.
Serve

6 Serve

  • Load the tortilla wraps with the beef and corn salsa.
  • Serve the Chipotle Barbecue Pulled Beef Tacos with Corn Salsa.
  • Add a dollop of sour cream on top.
Tip! If cooking for kids, serve the barbecue beef, cucumbers, tomatoes, corn and tortillas separately. Serve the sour cream, grated cheddar and coriander as 'sprinkles' to the side.
