Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Marinate beef
Transfer the beef strips to a bowl. Juice the lime. Add 0.75 Tbsp of lime juice, the fish sauce, black pepper and chilli flakes (see tips for fussy eaters) to the bowl and give everything a good mix up. Set aside to marinate for 10 min.
2 Prep vegetables
Meanwhile, peel and slice the carrots into thin matchsticks. Finely slice the bell pepper. Peel and crush the garlic. Peel and grate the ginger. Trim the sugar snap peas and slice them on the diagonal. Rinse and chop the spring onion.
3 Boil noodles
Bring a pot of salted water to the boil. Once boiling, add the noodles and cook for 3 min until tender. Once tender, drain and run under cold water to keep them from sticking together. Set aside.
4 Fry beef
Drain any excess marinade from the beef strips. Heat a pan with a drizzle of vegetable oil over a high heat. Once hot, add the beef strips and fry for 2-3 min. Transfer the beef strips to a plate and return the pan to a high heat with a drizzle of oil. Tip: If the pan is looking crowded, you may wish to fry the beef strips in batches.
5 Fry vegetables
Add the carrots and bell pepper to the pan and fry for 2 min. Add the garlic, ginger and sugar snap peas. Stir-fry for 2 min. Combine the soy sauce and brown sugar in a small bowl and add it to the the pan. Stir for 2 min further.
6 Serve
Add the beef strips, drained noodles, spring onion and sesame seeds to the pan. Give everything a good mix up. Slice the limes into wedges and the redchilli into thin rings. Chop the fresh coriander. Divide the stir fry among plates and garnish with the lime, chilli and coriander.
