Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Bring a large pot of salted water to a boil. Meanwhile, roughly chop the spinach. Chop the sun-driedtomatoes into bite sized pieces. Peel and mince the garlic.
2 Boil pasta
Once the pot of water is boiling, add the pasta and cook for 8-10 min until 'al dente' or cooked to your liking. Reserve 100 ml of pastawater and drain the cooked pasta.
3 Start sauce
Meanwhile, heat a non-stick pan over a medium heat with a drizzle of oil. Once hot, add the garlic and spinach. Cook for 2 min. Flake the smokedmackerel into the pan. Add the reserved pastawater, the onionstockcube, sun-driedtomatoes, chilliflakes(spicy!) and creamcheese. Cook for 3 min or until sauce begins to thicken. Add the drained pasta and toss in the sauce.
4 Serve
Divide the pasta among bowls. Slice the lemon in half and squeeze over th pasta.
