Instructions

1 Prep

Bring a large pot of salted water to a boil. Meanwhile, roughly chop the spinach. Chop the sun-dried tomatoes into bite sized pieces. Peel and mince the garlic.

2 Boil pasta

Once the pot of water is boiling, add the pasta and cook for 8-10 min until 'al dente' or cooked to your liking. Reserve 100/150/200 ml of pasta water and drain the cooked pasta.

3 Start sauce

Meanwhile, heat a non-stick pan over a medium heat with a drizzle of oil. Once hot, add the garlic and spinach. Cook for 2 min. Flake the smoked mackerel into the pan. Add the reserved pasta water, the onion stock cube, sun-dried tomatoes, chilli flakes (spicy!) and cream cheese. Cook for 3 min or until sauce begins to thicken. Add the drained pasta and toss in the sauce.

4 Serve

Divide the pasta among bowls. Slice the lemon in half and squeeze over th pasta.

Tips for fussy eaters

Save a cup of pasta water - the salty, starchy water not only adds flavour but also thickens the sauce and helps bring the pasta and sauce together.
