Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Boil potatoes
Preheat the oven to 200°C/180°C fan.
Halve the potatoes.
Cook them in a pot of salted boiling water for 10 min or until tender.
Once cooked, drain and leave them to steam dry in a colander for 5 min.
Tip!Steam drying your potatoes is important to ensure they are easy to crush.
2 Fry steak
Meanwhile, grate the Parmesan.
Pat the steaks dry with kitchen paper, rub them with oil and season with salt.
Heat a large pan over a high heat.
Once very hot, add the steaks and fry them for 3 min on each side.
Set the steaks aside.
Reserve the pan.
3 Crush potatoes
Place the potatoes on a lined baking tray cut-side down. Crush them by pressing down firmly with the back of a fork.
Add a drizzle of oil, salt and pepper. Bake for 10 min.
After 10 min, top the potatoes with grated Parmesan.
Place the steaks on a second baking tray and finish cooking them and the potatoes in the oven for another 10 min.
Once done, transfer the steaks to a plate and leave to rest for 10 min.
Once rested, season with salt and pepper.
4 Fry broccoli
Return the steak pan to high heat with the tenderstembroccoli, a splash of water and a drizzle of oil.
Fry for 8-10 min or until crunchy and brown on the edges. Season with salt.
Set aside on a plate and keep warm.
Reserve the pan.
Tip!Alternatively, roast the broccoli in a hot oven for 8-10 mins.
5 Make pan sauce
Return the pan to medium heat.
Add the butter and cook for 2 min until it begins to brown.
Add the flour and stir for 1 min.
Gradually whisk in the measured water, onionmarmalade, Worcestershiresauce and beefstockcube.
Cook for 2-3 min until thickened.
Season generously with blackpepper. Set aside.
6 Serve
Serve the rested Steak with the ParmesanPotatoes, TenderstemBroccoli and Pan Sauce to the side.
