Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

Peel and finely chop the onion. Trim the green beans. Finely chop the coriander leaves.
Fry

2 Fry

Heat a pan over a medium high heat with a drizzle of oil. Once hot, add the onion with a pinch of salt and fry for 5 min until softened. Once softened, add the ginger garlic paste, tomato paste, turmeric, cumin and chilli powder (spicy!). Fry for 2 min further.
Simmer

3 Simmer

Reduce the heat to medium. Add the coconut cream, curry leaves, measured water and 0.5 stock cube. Simmer for 5 min. Meanwhile, pat the prawns dry on kitchen paper. After 5 min, add the prawns and simmer for 2-3 min further.
Cauliflower rice

4 Cauliflower rice

Meanwhile, using a box grater or food processor, grate or blitz the cauliflower until it resembles rice grains. Heat a saucepan over a medium heat with a drizzle of oil. Once hot, add the cauliflower with a pinch of salt and stir-fry for 5 min.
Tip! Cauliflower rice is a great low carb alternative! If you're craving carbs though, serve the curry with basmati rice instead.
Boil green beans

5 Boil green beans

Meanwhile, cook the green beans in a pot of salted boiling water for 3-4 min or until tender. Drain once cooked.
Serve

6 Serve

Serve the curry alongside the cauliflower rice and green beans. Garnish the curry with the coriander. Sprinkle the green beans with salt and nigella seeds.
