Preheat the oven to 200°C/180°C fan. Peel and chop the onion and garlic. Heat a pan over a medium-high heat with a drizzle of oil. Fry the onion with a pinch of salt for 5 min. Add the beef mince. Fry for 5 min further or until nicely browned. Add the garlic, taco seasoning (spicy!) and measured water. Simmer for 5 min until thickened.
Line an oven tray with baking paper. Add half of the nachos and top them with the beef mixture, followed by half of the cheese and half of the jalapeno slices (spicy!). Repeat. Bake in the oven for 15 min or until the cheese has melted and turned golden.
Meanwhile, chop the tomatoes. Cut the avocado in half and remove its stone. Scoop the avocado out of its skin using a spoon, then slice it. Slice the spring onion thinly.
Remove the nachos from the oven. Serve with the tomatoes, avocado and spring onion. Finish with a dollop of sour cream and a drizzle of sriracha (spicy!).
Serve the jalapenos and the sriracha sauce on the side.
Use this opportunity to get rid of any leftover cheese you might have in the fridge!
