Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Bash chicken
Pre-heat the grill to high.
Place the chickenbreasts on a chopping board.
Cover with cling film.
Bash with something heavy like a rolling pin until halved in thickness.
2 Marinate chicken
Juice half the lemon into a large bowl.
Add the oliveoil, salt, pepper, honey and garliconionpowder.
Add the chicken and turn to coat.
Set aside.
3 Prep dressing
Juice the remaining lemon into a second large bowl.
Add the oliveoil and driedoregano.
Season with salt and pepper.
Keep dressing aside.
Tip!If you don't love raw onion, add it to the dressing and allow it to marinate slightly. This will soften its harsh taste.
4 Grill chicken
Place the chicken on a lined baking tray (nestle the rosemary underneath).
Cover with the remaining marinade.
Grill for 8-10 min or until cooked through and starting to char.
5 Prep salad
Meanwhile, halve the cherrytomatoes.
Peel and very finely slice the onion.
Roughly chop the lettuce, pepper and cucumber.
Toss the tomatoes, onion, cucumber, olives, lettuce and pepper in the dressing.
6 Serve
Slice the chicken.
Serve the Mediterranean Grilled Chicken with Greek Salad and Feta.
Crumble over the feta.
Tip!Olives are not for everyone. If you dislike them, leave it out!
