Instructions

Roast sweet potatoes

1 Roast sweet potatoes

Preheat oven to 220°C/200°C fan. Wash the unpeeled sweet potatoes and slice them into 2 cm thick rounds. Add the sweet potatoes to a lined baking tray. Drizzle with olive oil and sprinkle with salt. Roast in the oven for 20-25 min or until softened and well browned.

Meanwhile, peel and chop the onions. Peel and finely chop the garlic.
Fry topping

Heat a large pan over a medium heat with a drizzle of oil. Once hot, add the chicken mince and fry for 3 min. Add the onion and garlic and fry for 3 min further. Add the tomato paste, taco seasoning and smoked paprika powder, and cook for 2 min further. Finally, fold in the sour cream. Season to taste with salt and pepper.
Top sweet potatoes

4 Top sweet potatoes

Remove the sweet potatoes from the oven. Spoon the chicken mix over the top. Add the grated cheddar and grated mozzarella. Bake for 10-15 min further until the cheese is golden and bubbly.
Boil broccoli

5 Boil broccoli

Meanwhile, rinse the broccoli and separate it into florets. Cook the broccoli florets in a pot of salted boiling water for 5 min or until tender. Drain once tender.
Serve

6 Serve

Serve the loaded sweet potatoes with the cooked broccoli to the side.
