Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Wash and cut
Preheat the oven to 100°C/80°C fan. Wash and shred the lettuce. Add the lettuce and the grated cheese to a bowl and give them a good mix up. Set aside.
2 Make guacamole
Halve and de-stone the avocado. Scrape it into a bowl and mash roughly with a fork. Juice the lime. Chop the coriander. Season the guacamole with the lime juice, coriander and a pinch of salt.
3 Season
Add the beef strips into a small bowl. Thinly slice the red onion and peppers and transfer them to another bowl. Drizzle both bowls with oil and season each, evenly, with peeled and crushed garlic and the fajitaseasoning.
4 Heat and fry
Wrap the tortillas in foil and warm them in the oven. Meanwhile, heat 2 large frying pans over a high heat with a drizzle of oil. Add the beef to one of the pans and fry for 4-5 min. Season with salt and pepper. Remove the pan from heat and set aside.
5 Fry vegetables
Add the peppers and onions to the second pan and fry for 5-6 min until softened and caramelized around the edges.
6 Serve
Serve all of the tortillas toppings separately, allowing everyone to help themselves. Don't forget the sour cream!
