Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Chop the zucchini into small bite-sized pieces. Finely chop the chives. Wash the lemon thoroughly and grate its zest with a fine blade, taking care to avoid its bitter white pith.
2 Fry
Heat a large non-stick pan over a medium-high heat with a drizzle of oil. Once hot, add the zucchini with a pinch of salt and fry for 2 min. Add the gnocchi and fry for 5 min or until golden and crispy.
Tip!Frying the gnocchi makes it crispy on the outside, and light and fluffy in the middle.
3 Simmer
Add the cream, garliconionpowder, spinach and measured water. Simmer for 5 min or until the sauce begins to thicken.
4 Tear salmon
Meanwhile, tear the salmon into bite-size pieces.
5 Finish gnocchi
Once thick, remove the pan from the heat, add the smokedsalmon (reserve some for garnish!), 1 tsp lemonzest, the Granapadano, chives and a generous squeeze of lemon juice. Stir until combined.
6 Serve
Divide the gnocchi amongst bowls and top with the remaining smokedsalmon and a crack of black pepper.
