Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Bake fries

1 Bake fries

  • Preheat the oven to 200°C/180°C fan.
  • Slice the potatoes (skins on) into fries.
  • Add the fries to a large lined baking tray.
  • Add a drizzle of vegetable oil and a generous pinch of salt.
  • Toss the fries in the oil until they are fully coated.
  • Bake for 30 min or until golden and crisp.
Prep

  • Meanwhile, peel and mince the garlic.
  • Peel and slice the onions.
  • Finely chop the chives.
  • Grate the Parmesan.
Fry steak

3 Fry steak

  • Pat the steaks dry with kitchen paper.
  • Rub them with vegetable oil and season with salt.
  • Heat a large pan over a high heat.
  • Once very hot, add the steaks.
  • Fry them for 2-4 min on each side or until cooked to your liking.
  • Transfer the steaks to a plate.
  • Leave them to rest.
  • Reserve the pan.
  • Once rested, season generously with pepper.
Make sauce

4 Make sauce

  • Return the pan to a medium heat with a drizzle of oil.
  • Once hot, add the onions with a pinch of salt.
  • Fry for 8-10 min or until softened.
  • Add the garlic, Worcestershire, onion marmalade, measured water and black pepper.
  • Simmer for 3 min or until the sauce begins to thicken slightly.
  • Remove from the heat.
  • Stir in the butter.
Add Parmesan

5 Add Parmesan

  • After the fries have baked for 30 mins add the Parmesan.
  • Roast for 5 min further or until the Parmesan begins to melt and crisp up.
Serve

6 Serve

  • Serve the Pan-seared Steak with Butter Sauce and Parmesan Chive Fries
