Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep vegetables
Preheat the oven to 200°C/180°C fan. Peel and mince the shallots and garlic. De-seed and chop the chilli finely. Rinse and trim the green beans.
2 Make tomato sauce
Heat a pan over a medium-high heat with a drizzle of olive oil. Fry the shallots with a pinch of salt for 2 min. Add the garlic and chilli(spicy!) and fry for 1-2 min further. Add the chopped tomatoes and black pepper. Reduce the heat to low and simmer, uncovered, for 10-15 min. Check the seasoning.
3 Bake casserole
Drain, rinse and dry the prawns. Remove the sauce from the heat, add the prawns and give everything a good mix up. Transfer the sauce and prawns to small individual casserole dishes or to one large casserole dish. Crumble the feta cheese over the top. Bake in the oven for 10 min. If you prefer a toasted surface, pop the dish under the broiler for the final 1-2 min.
4 Boil green beans
Meanwhile, cook the green beans in a pot of salted boiling water for 3-4 min or until tender. Drain once cooked.
5 Serve
Chop the freshparsley. Garnish the prawn saganaki with the choppedparsley. Serve the greenbeans to the side.
