Instructions

1 Prep veggies

Peel and mince shallots and garlic. Remove chilli stem (and seeds). Mince chilli. Rinse green beans and remove stems.

2 Make tomato sauce

Heat a pan over medium-high heat with a drizzle of olive oil. Fry shallots with a pinch of salt for 2 min. Add garlic and chilli, fry for 1-2 min. Add chopped tomatoes and black pepper, and bring to a boil. Reduce the heat to low let simmer lightly, uncovered, for 10-15 min. Check the seasoning.

3 Bake casserole

Preheat the oven to 200°C/180°C fan. Transfer the tomato sauce to small individual casseroles or to one larger oven casserole. Mix in the prawns. Crumble the feta cheese on top. Bake in the oven for 10 min. If you prefer a toasted surface, pop under the broiler for the last 1-2 min. Finish with chopped fresh parsley.

4 Boil green beans

Meanwhile, bring a pot of lightly salted water to a boil. Cook green beans for about 5 min until crisp-tender. Drain and serve with the prawn saganaki.

Tips for fussy eaters

Make a batch without feta. Serve with pasta.

Pro tip

When you're entertaining, cook the recipe for 2 people but serve for 4 as a starter, with some nice bread.
