Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Marinate
Marinate salmon pieces in a bowl with soy sauce, grated ginger, chopped chilli and lime juice.
2 Clean and cut
Meanwhile, clean and cut pepper and carrot to thin strips and stics. Cut broccoli to florets.
3 Cook
In a pot of boiling water, cook broccoli for 5 minutes until softened. Drain and set aside.
4 Boil
In another pot of boiling water, cook noodles for 2 minutes, drain and set aside. Add a bit of boiling water and a drop of oil to prevent from sticking.
5 Fry
Heat a large pan with coconut oil over medium heat. Fry carrots and peppers for 3-4 minutes until slightly softened. Add broccoli and mix. Remove from the pan and keep warm.
6 Serve
Place the salmon in the pan and fry for 3-4 minutes until nicely browned. Now add the veggies back into the pan and mix carefully. Season with salt to taste. Serve the stir fry with drained noodles and freshly chopped coriander.
