Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Chop the avocado in half and remove the stone.
Scoop the avocado out of its skin using a spoon, then slice it.
Finely chop the tomatoes and coriander.
In a bowl, combine the tomatoes and coriander with a squeeze of lime (reserve the remaining lime for the mayo), a drizzle of oil and a pinch of salt.
Set the salsa aside.
Tip!Save some whole coriander leaves and lime wedges for garnish.
2 Fry strips
Heat a non-stick pan over a high heat with a drizzle of oil.
Once hot, add the steak strips and fajitaseasoning.
Cook for 3 min.
Remove the pan from the heat and set aside.
Season with salt and pepper.
3 Make chipotle mayo
In a small bowl, combine the mayonnaise with a pinch of chipotlepowder(spicy!).
Season with a squeeze of lime juice and a pinch of salt.
4 Warm tortillas
Heat the tortillawraps in the microwave for 30-60 secs until warm.
Tip!Or, fry in a hot dry pan for 30 sec on each side until browned. Repeat with all of the tortillas.
5 Serve
Load the tortillawraps with the chipotlemayo, steak, avocado and salsa.
