Seared Tuna Poke Bowl

with Brown Rice and Avocado

Instructions

1 Cook rice

Rinse the rice and pour in a pot with water. Bring to boil, then cover, drop to low temperature and allow to simmer gently for 18 minutes until all the water is absorbed and the rice is cooked.

2 Make marinade

In a large bowl, mix soy sauce, honey, sesame oil, rice vinegar, sesame seeds and half of the chopped spring onions.

3 Sear tuna

Cut tuna to cubes. Sear for 1-2 minutes on a hot pan with oil. Remove from the pan and toss in the marinade.

4 Clean and cut

Clean and cube cucumber. Peel carrot and cut to thin strips with a peeler. Cut avocado to slices. Chop chilli.

5 Add and serve

Prepare poke bowls by placing the cooked rice at the bottom of the bowl. Top with cucumber, carrot and tuna. Sprinkle with the remaining spring onions and thinly sliced red chilli.

Tips for fussy eaters

Serve with basmati or jasmine rice.

Pro tip

Typically the tuna in a poke bowl is raw or merely marinated. Searing the tuna adds extra texture which we love.
