Peel and mince the garlic (see pro tip). Trim and very finely slice the spring onion. Trim and chop the broccoli into very small florets.
Bring a large pot of water to the boil. Once boiling, add the noodles and cook for 2 min.
After 2 min, add the broccoli and cook for 2 min further or until both the noodles and the broccoli are tender. Drain and reserve a cup of noodle cooking water.
Heat a large pan over a high heat (no need to wash it) with a drizzle of oil. Once hot, add the salmon fillets with the a pinch of salt and cook for 3-4 min on either side until cooked through.
Add the butter, garlic and spring onion to the salmon and sauté for 2-3 min (don't let the garlic turn brown!). Add the soy sauce and fish sauce. Remove the pan from the heat. Flake the salmon into large chunks.
Add the drained broccoli and noodles to the pan with a generous splash of the noodle cooking water. Carefully toss. Serve immediately.
Go easy on the garlic and consider swapping the fish sauce for another drizzle of soy!
