Tips for fussy eaters

Separate some of the prawns and greens, and prepare a mild stir-fry for them. Serve over cooked rice.

Pro tip

Marinate the prawns in advance!

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

1 Prep prawns

See pro tip! Drain the prawns on kitchen paper. Peel and crush the garlic. Add the prawnsgarlicchipotle (spicy!), salt and pepper to a bowl and mix well. Set aside.

2 Prep vegetables

Using a box grater, grate the cauliflower so that it resembles rice grains. Finely slice the spring onion. Rinse and trim the green beans, and slice them finely. Finely chop the zucchini. Slice the snow peas on the diagonal.

3 Make lime mayo

Wash the lime thoroughly and grate its zest with a fine blade. Juice the lime. In a bowl, combine a pinch of grated lime zest and a splash of lime juice with the mayonnaise. Mix well and set aside.

4 Fry cauliflower 'rice'

Heat a pan over a medium heat with a drizzle of oil. Fry the cauliflowergreen beans and zucchini with a pinch of salt for 5 min. Add the spring onion (reserve some for garnish) and snow peas, and fry for 1-2 min further. Add the soy sauce and mix well. Season with pepper. Remove from the pan and keep warm.

5 Fry prawns

Return the pan to a medium-high heat with a second drizzle of oil. Once hot, fry the seasoned prawns for 3 min until cooked through (do not overcook them or they will go rubbery). Add the hoisin sauce for the last 30 sec and stir well to coat the prawns in the sauce.

6 Serve

Divide the green cauliflower 'rice' among plates and top with the spicy hoisin prawns. Garnish with the remaining spring onion and the sesame seeds. Finish with a spoonful of lime mayonnaise.
