Instructions
1 Prep prawns
See pro tip! Drain the prawns on kitchen paper. Peel and crush the garlic. Add the prawns, garlic, chipotle(spicy!), salt and pepper to a bowl and mix well. Set aside.
2 Prep vegetables
Using a box grater, grate the cauliflower so that it resembles rice grains. Finely slice the springonion. Rinse and trim the greenbeans, and slice them finely. Finely chop the zucchini. Slice the snowpeas on the diagonal.
3 Make lime mayo
Wash the lime thoroughly and grate its zest with a fine blade. Juice the lime. In a bowl, combine a pinch of grated lime zest and a splash of lime juice with the mayonnaise. Mix well and set aside.
4 Fry cauliflower 'rice'
Heat a pan over a medium heat with a drizzle of oil. Fry the cauliflower, greenbeans and zucchini with a pinch of salt for 5 min. Add the spring onion (reserve some for garnish) and snowpeas, and fry for 1-2 min further. Add the soysauce and mix well. Season with pepper. Remove from the pan and keep warm.
5 Fry prawns
Return the pan to a medium-high heat with a second drizzle of oil. Once hot, fry the seasoned prawns for 3 min until cooked through (do not overcook them or they will go rubbery). Add the hoisinsauce for the last 30 sec and stir well to coat the prawns in the sauce.
6 Serve
Divide the greencauliflower 'rice' among plates and top with the spicy hoisinprawns. Garnish with the remaining spring onion and the sesameseeds. Finish with a spoonful of limemayonnaise.
