Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Form meatballs
Add the chicken mince, soysauce and black pepper to a mixing bowl. With clean hands, mix until all the ingredients are fully combined. With oiled hands, shape the meat into meatballs. Set aside.
2 Prep vegetables
Slice the cabbage very thinly. Peel the carrot and slice it into matchsticks. Chop the springonion. Finely slice the redchilli. Chop the peanuts and the coriander.
3 Mix sauce
Peel and crush the garlic. Peel and grate the ginger. Juice the limes. Combine the garlic, ginger, 1 Tbsp of lime juice, misopaste and honey in a small bowl. Mix until smooth. This is your stir fry sauce.
4 Stir-fry vegetables
Heat a pan over a high heat with a drizzle of vegetable oil. Once hot, add the cabbage, carrot, springonion and redchilli, and fry for 2 min until slightly softened but crunchy (when cooking for 3 or 4, use two pans). Add the stir fry sauce and fry for 1 min further. Give everything a good toss.
5 Fry meatballs
Heat a pan over a medium heat with a drizzle of oil. Once hot, add the meatballs and fry for 8-10 min, turning occasionally, until browned. Mix the teriyakisauce with the sriracha. Spoon the mixture over the meatballs. Finally sprinkle with the sesameseeds. Keep warm.
6 Serve
Divide the vegetable stir fry among plates. Top with the teriyakichicken meatballs. Garnish with the chopped peanuts and coriander.
