Chicken meatballs

Chicken mince
400 Grams
Soy sauce
20 ML
Black pepper
0.5 Tsp
Teriyaki sauce
40 Grams
Sriracha sauce
20 Grams
Sesame seeds
10 Grams
Vegetable oil
2 Tbsp

Stir fry

White cabbage
300 Grams
1 Piece
Spring onion
50 Grams
Large red chilli
1 Piece
Vegetable oil
1 Tbsp

Stir fry sauce

Garlic cloves
2 Pieces
30 Grams
2 Pieces
Miso paste
20 Grams
15 Grams

To serve

Salted peanuts
40 Grams
Fresh coriander
15 Grams


1 Form meatballs
Add the chicken mince, soy sauce and black pepper to a mixing bowl. With clean hands, mix until all the ingredients are fully combined. With oiled hands, shape the meat into meatballs. Set aside.
2 Prep vegetables
Slice the cabbage very thinly. Peel the carrot and slice it into matchsticks. Chop the spring onion. Finely slice the red chilli. Chop the peanuts and the coriander.
3 Mix sauce
Peel and crush the garlic. Peel and grate the ginger. Juice the limes. Combine the garlicginger, 1/1.5/2 Tbsp of lime juice, miso paste and honey in a small bowl. Mix until smooth. This is your stir fry sauce.
4 Stir-fry vegetables
Heat a pan over a high heat with a drizzle of vegetable oil. Once hot, add the cabbagecarrotspring onion and red chilli, and fry for 2 min until slightly softened but crunchy (when cooking for 3 or 4, use two pans). Add the stir fry sauce and fry for 1 min further. Give everything a good toss. 
5 Fry meatballs
Heat a pan over a medium heat with a drizzle of oil. Once hot, add the meatballs and fry for 8-10 min, turning occasionally, until browned. Mix the teriyaki sauce with the sriracha. Spoon the mixture over the meatballs. Finally sprinkle with the sesame seeds. Keep warm.
6 Serve
Divide the vegetable stir fry among plates. Top with the teriyaki chicken meatballs. Garnish with the chopped peanuts and coriander.
Tips for fussy eaters
Keep the chicken meatball seasoning mild. Serve with ketchup, cooked rice or pasta and fresh vegetables.
Pro tip
Don't overcrowd your pan! Otherwise you'll end up stewing, not frying your vegetables.
