Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Preheat the oven to 220°C/200°C fan. Preheat your baking trays. Mix the dried zaatar, sesameseeds, a pinch of salt and olive oil in a bowl. Halve the cherrytomatoes. Peel and slice the shallots.
Sprinkle the flour onto a clean surface and onto a rolling pin. Roll out the doughballs in a forward and backward motion (until the dough takes on an oval shape). Allow the dough to rest for 3 min. Once rested, roll the dough out until roughly 30 cm long. Transfer to the pre-heated baking trays.
Top the pizza base with the mozzarella, followed by the zaatar mixture, the crumbled feta, the cherrytomatoes and the shallots. Bake for 20 min or until the crust begins to crisp and brown.
4 Prep zaatar
Meanwhile, wash the zaatar thoroughly. Pick the zaatar leaves.
Once baked, top the manakish with the freshzaatar leaves. Finally, drizzle with olive oil and top with the olives. Slice and serve alongside the hummus.
