with Raisins and Pomegranate Seeds

Instructions

1 Clean and cut

Peel and cut the carrots into tiny cubes. Rinse green beans, trim off stems. Cut the beans to 2cm pieces. Peel and mince onion and garlic.

2 Fry veggies

Heat oil in a large pan over high heat. Fry carrots, onions, and green beans for 5 minutes. Set aside.

3 Fry Chicken

Fry chicken mince. Bring fried veggies back to the pan. Add garlic, chilli flakes, turmeric, coriander, and cinnamon. Cook for 2 minutes.

4 Add and serve

Add raisins, couscous, water, and crumbled stock cube. Bring to a boil, mix well, and then take off the stove. Cover, and let the couscous soak up all the liquid, about 5 minutes. Add 2/3/4 Tsp of lemon juice and salt. Stir, fluffing the couscous. Top with pomegranate seeds and freshly chopped parsley.

Tips for fussy eaters

Go easy on the spices (chili and cinnamon).
